What protocol settings are appropriate in 10/4/fx>preferences>advanced>encryption: SSL 3.0 or TLS 1.0 or select both? What does this do for me?

Both should be checked. This means, the browser then supports the slightly older but still secure SSL 3.0, and the more recent TLS 1.0 (which is actually just another name for SSL 3.1). They're both checked by default.

Thanks. So this is the codec or security for web-forms sent?

It's a protocol for encrypting the data sent between your browser and the web server it's connected to (both directions).
